Ingredients
  

  • Coconut oil – ½ cup melted
  • Cream cheese – ¼ cup softened
  • Powdered keto sweetener – ½ cup
  • Peppermint oil – ¼ teaspoon
  • Vanilla extract – ½ teaspoon
  • Salt – A pinch
  • Keto-friendly chocolate chips – 1 cup melted
  • Coconut oil for chocolate coating – 1 tablespoon

Instructions
 

  • In a mixing bowl, whisk together melted coconut oil, softened cream cheese, powdered sweetener, peppermint oil, vanilla extract, and a pinch of salt until smooth and creamy.
  • Chill the mixture in the fridge for about 15 minutes or until it firms up enough to scoop.
  • Scoop small portions and roll them into balls, then flatten into disc shapes. Place on a parchment-lined tray.
  • Freeze the patties for at least 30 minutes to firm up completely.
  • Melt the keto-friendly chocolate chips with 1 tablespoon of coconut oil using a microwave or a double boiler, stirring until smooth.
  • Dip each frozen peppermint patty into the melted chocolate, coating it completely. Let any excess drip off, then place it back on the parchment paper.
  • Refrigerate the coated patties for about 10-15 minutes until the chocolate hardens.
  • Enjoy immediately or store in an airtight container in the fridge or freezer for later!
