  • Low-carb tortillas – 2
  • Mozzarella cheese – 1 cup
  • Turkey pepperoni – 12–16 slices
  • Olive oil or butter – 1 tbsp

  • Lightly brush one side of each low-carb wrap with olive oil or melted butter. Make sure the coating is even but not heavy, as this helps the wraps turn golden and crispy in the air fryer without becoming greasy. Place the wraps oil-side down on a clean surface so they’re ready for filling.
  • On the unbrushed side of each wrap, sprinkle an even layer of shredded mozzarella cheese, leaving a small border around the edges. Arrange the turkey pepperoni slices evenly over the cheese so every bite gets that classic pizza flavor. If you like extra seasoning, you can sprinkle a little Italian seasoning or garlic powder at this stage.
  • Starting from one edge, roll the wrap up tightly into a log or burrito shape, keeping the filling tucked in as you go. Apply gentle pressure while rolling so the wrap stays compact, but don’t worry if a little cheese peeks out — it will melt and crisp nicely during cooking.
  • Preheat the air fryer to 380°F (193°C). Place the wraps seam-side down in the air fryer basket, leaving a bit of space between them so hot air can circulate. Air fry for 6–8 minutes, flipping halfway through, until the wraps are deeply golden, crisp on the outside, and the cheese inside is fully melted.
  • Carefully remove the wraps from the air fryer and let them rest for 1–2 minutes. This allows the cheese to set slightly and makes slicing easier. Use a sharp knife to cut the wraps into halves or slices, then serve immediately while hot and crispy.
