Ingredients
  

  • 2 cups shredded sharp cheddar cheese
  • 4 oz cream cheese (softened)
  • 1/2 cup mayonnaise (sugar-free)
  • 1/4 cup diced pimentos drained
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • A pinch of smoked paprika or cayenne for extra flavor (optional)

Instructions
 

  • If using block cheddar, start by shredding it for the best texture. Let the cream cheese sit at room temperature to soften.
  • In a mixing bowl, add the softened cream cheese and mayonnaise. Use a hand mixer or spoon to blend until smooth and creamy.
  • Gently fold in the shredded cheddar cheese, diced pimentos, garlic powder, onion powder, salt, and pepper. If desired, add smoked paprika or cayenne for extra flavor.
  • Mix everything together until well combined. Taste and adjust seasoning if needed.
  • For the best flavor, let the pimento cheese chill in the fridge for about 1 hour before serving. This helps the flavors meld together.
  • Serve as a dip with veggies, spread on keto crackers, or use as a topping for burgers and sandwiches.
