Ingredients
  

For the Pulled Pork:

  • 2 lbs 900g pork shoulder (pork butt)
  • 2 tbsp keto taco seasoning or homemade: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp salt, ¼ tsp black pepper
  • ½ cup water or chicken broth
  • 1 tbsp olive oil for searing, optional

For the Nachos:

  • 4 cups pork rinds or 1½ cups shredded cheese, if making cheese chips
  • cups shredded cheese cheddar, Monterey Jack, or mozzarella
  • 1 medium avocado diced
  • 1 small jalapeño sliced
  • ¼ cup salsa low-carb, sugar-free
  • ¼ cup sour cream
  • 2 tbsp fresh cilantro chopped

Instructions
 

  • Cook pulled pork in a slow cooker (6-8 hours) or Instant Pot (90 minutes) until tender. Shred.
  • Prepare keto-friendly chips: bake cheese chips or use pork rinds.
  • Layer chips, cheese, and pulled pork.
  • Broil until cheese is melted (2-3 minutes).
  • Top with avocado, salsa, jalapeños, sour cream, and cilantro. Serve hot!
