- 2 cups Red cabbage (thinly sliced)
- 1 cup Bell peppers (sliced; mix of colors)
- 1 cup Cucumber (sliced)
- 1 cup Cherry tomatoes (halved)
- 1/2 cup Carrots (shredded; optional)
- 1/4 cup Red onion (sliced)
- 1 Avocado (diced)
- 1 cup Mixed greens (arugula, spinach, or kale)
- 3 tbsp Olive oil
- 2 tbsp Lemon juice
- salt and pepper to taste
Thinly slice the red cabbage, bell peppers, cucumber, and red onion. Halve the cherry tomatoes and dice the avocado.
In a large bowl, combine the mixed greens, prepared vegetables, and avocado.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Adjust seasoning to taste.
Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
