- Beef chuck roast 3-4 lbs
- Garlic 4 cloves
- Yellow onion 1
- Chipotle peppers in adobo sauce 2
- Lime juice 2 tbsp
- Apple cider vinegar 1 tbsp
- Ground cumin 1 tsp
- Ground oregano 1 tsp
- Beef broth 1 cup
- Salt and pepper to taste
Trim any excess fat from the beef chuck roast and cut it into chunks if necessary.
In a small bowl, mix minced garlic, chopped onion, chipotle peppers, lime juice, apple cider vinegar, cumin, and oregano.
Rub the spice mixture all over the beef.
Place the beef in the slow cooker and pour in the beef broth.
