- Almond Flour – 1 cup
- Eggs – 3 large
- Heavy Cream – 1/2 cup
- Unsweetened Cocoa Powder – 2 tablespoons
- Vanilla Extract – 1 teaspoon
- Peanuts – 1/4 cup
- Sugar-Free Caramel Syrup – 2 tablespoons
- Sugar-Free Chocolate Chips – 1/4 cup
Whisk together almond flour, cocoa powder, eggs, heavy cream, and vanilla extract in a medium bowl until smooth.
Heat a crepe pan over medium heat and lightly grease it.
Pour about 1/4 cup of batter into the pan, tilting it to spread evenly.
Cook for 1-2 minutes until the edges lift, then flip and cook for another 30 seconds.
Remove from the pan and set aside.
In a small saucepan, melt the chocolate chips and caramel syrup together over low heat, stirring constantly until smooth.
Drizzle the chocolate-caramel sauce over each crepe, then sprinkle with chopped peanuts.
Roll up the crepes and serve!
