Ingredients
  

  • Almond Flour – 1 cup
  • Eggs – 3 large
  • Heavy Cream – 1/2 cup
  • Unsweetened Cocoa Powder – 2 tablespoons
  • Vanilla Extract – 1 teaspoon
  • Peanuts – 1/4 cup
  • Sugar-Free Caramel Syrup – 2 tablespoons
  • Sugar-Free Chocolate Chips – 1/4 cup

Instructions
 

  • Whisk together almond flour, cocoa powder, eggs, heavy cream, and vanilla extract in a medium bowl until smooth.
  • Heat a crepe pan over medium heat and lightly grease it.
  • Pour about 1/4 cup of batter into the pan, tilting it to spread evenly.
  • Cook for 1-2 minutes until the edges lift, then flip and cook for another 30 seconds.
  • Remove from the pan and set aside.
  • In a small saucepan, melt the chocolate chips and caramel syrup together over low heat, stirring constantly until smooth.
  • Drizzle the chocolate-caramel sauce over each crepe, then sprinkle with chopped peanuts.
  • Roll up the crepes and serve!
