Ingredients
  

  • 3 cups cauliflower rice
  • 2 tbsp olive oil
  • 2 cloves garlic
  • ½ small onion
  • 2 tbsp tomato paste
  • ¼ cup broth
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt & pepper

Instructions
 

  • Heat oil in a skillet over medium heat.
  • Sauté onion for 2-3 minutes until soft.
  • Add garlic, cook for 30 seconds.
  • Stir in tomato paste, paprika, cumin, salt, and pepper.
  • Add cauliflower rice, mix well.
  • Pour in broth, cook for 5-7 minutes.
  • Garnish with cilantro, serve hot.
