Ingredients
  

  • Eggplant: 2 medium
  • Minced pork: 300g
  • Garlic: 3 cloves
  • Ginger: 1 tbsp
  • Soy sauce: 2 tbsp
  • Chili paste: 1 tbsp
  • Sesame oil: 1 tsp
  • Cooking oil: 2 tbsp

Instructions
 

  • Wash and chop eggplants into bite-sized pieces. Salt and let sit for 15 minutes, then pat dry.
  • Heat 1 tbsp oil in a skillet, cook eggplant until tender, and set aside.
  • In the same skillet, cook pork until browned.
  • Add minced garlic and ginger to the pork, cooking until fragrant.
  • Mix soy sauce, chili paste, and sesame oil in a bowl. Pour over pork and stir.
  • Return eggplant to the skillet, stir, and cook for 2-3 minutes.
  • Serve hot, garnished as desired.
