- Eggplant: 2 medium
- Minced pork: 300g
- Garlic: 3 cloves
- Ginger: 1 tbsp
- Soy sauce: 2 tbsp
- Chili paste: 1 tbsp
- Sesame oil: 1 tsp
- Cooking oil: 2 tbsp
Wash and chop eggplants into bite-sized pieces. Salt and let sit for 15 minutes, then pat dry.
Heat 1 tbsp oil in a skillet, cook eggplant until tender, and set aside.
In the same skillet, cook pork until browned.
Add minced garlic and ginger to the pork, cooking until fragrant.
Mix soy sauce, chili paste, and sesame oil in a bowl. Pour over pork and stir.
Return eggplant to the skillet, stir, and cook for 2-3 minutes.
Serve hot, garnished as desired.
