Ingredients
  

  • 2 cups almond flour
  • 1 ½ tsp baking powder
  • ½ cup granulated keto sweetener
  • 3 large eggs
  • ¼ cup melted butter
  • 1 tsp vanilla extract
  • ¼ cup unsweetened almond milk
  • ¾ cup diced fresh strawberries

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  • Mix almond flour, baking powder, and sweetener in a bowl.
  • In another bowl, whisk eggs, melted butter, vanilla, and almond milk.
  • Stir the wet ingredients into the dry until combined.
  • Fold in the diced strawberries gently.
  • Fill muffin liners with batter, about ¾ full.
  • Bake for 20–25 minutes until a toothpick inserted comes out clean.
  • Let cool for 10 minutes, then transfer to a wire rack.
