- 2 cups almond flour
- 1 ½ tsp baking powder
- ½ cup granulated keto sweetener
- 3 large eggs
- ¼ cup melted butter
- 1 tsp vanilla extract
- ¼ cup unsweetened almond milk
- ¾ cup diced fresh strawberries
Preheat oven to 350°F (175°C) and line a muffin tin with liners.
Mix almond flour, baking powder, and sweetener in a bowl.
In another bowl, whisk eggs, melted butter, vanilla, and almond milk.
Stir the wet ingredients into the dry until combined.
Fold in the diced strawberries gently.
Fill muffin liners with batter, about ¾ full.
