1/4cupchopped onion
2clovesgarlicminced
1/2cupdiced tomatoes
1tbspItalian herbs
Salt and pepper to taste
Fresh parsley or basil for garnish(optional)
Instructions
Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers, remove the seeds and membranes, and place them in a baking dish. Set aside.
Heat a skillet over medium heat and add a bit of oil. Sauté the chopped onion and minced garlic until fragrant. Add the ground beef and cook until browned. Season with Italian herbs, salt, and pepper. Stir in the diced tomatoes and cook for a few more
Use a spoon to fill each bell pepper with the beef mixture, packing it tightly. Top with shredded cheese.
Place the stuffed peppers in the preheated oven and bake for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Garnish with fresh parsley or basil if desired. Serve warm with a side salad or enjoy as is.
