Ingredients
  

  • 1 medium green cabbage
  • 1 lb ground beef
  • 1 cup cauliflower rice
  • 1/2 cup onion diced
  • 2 garlic cloves minced
  • 1 large egg
  • 1 1/2 cups no-sugar-added tomato sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions
 

  • Bring a large pot of water to boil. Add cabbage and cook for 5 minutes until leaves are tender. Remove cabbage and carefully separate 10 leaves. Pat dry.
  • In a skillet, heat a little olive oil over medium heat. Add onion and garlic, sautéing until softened.
  • In a large bowl, combine ground beef, cauliflower rice, cooked onion and garlic, egg, Italian seasoning, salt, and pepper. Mix thoroughly.
  • Place 2-3 tablespoons of filling onto each cabbage leaf. Fold sides over filling and roll tightly.
  • Pour a layer of tomato sauce into a large skillet or pot. Place cabbage rolls seam-side down. Pour remaining sauce over rolls. Cover and simmer on low heat for 45 minutes, until fully cooked.
