- 1 medium green cabbage
- 1 lb ground beef
- 1 cup cauliflower rice
- 1/2 cup onion diced
- 2 garlic cloves minced
- 1 large egg
- 1 1/2 cups no-sugar-added tomato sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Bring a large pot of water to boil. Add cabbage and cook for 5 minutes until leaves are tender. Remove cabbage and carefully separate 10 leaves. Pat dry.
In a skillet, heat a little olive oil over medium heat. Add onion and garlic, sautéing until softened.
In a large bowl, combine ground beef, cauliflower rice, cooked onion and garlic, egg, Italian seasoning, salt, and pepper. Mix thoroughly.
Place 2-3 tablespoons of filling onto each cabbage leaf. Fold sides over filling and roll tightly.
Pour a layer of tomato sauce into a large skillet or pot. Place cabbage rolls seam-side down. Pour remaining sauce over rolls. Cover and simmer on low heat for 45 minutes, until fully cooked.
