Ingredients
  

  • 10 dried red chilies
  • 2 tbsp lemongrass
  • 2 tsp ginger or galangal
  • 4 garlic cloves
  • 2 shallots
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp white pepper
  • 1 tbsp fish sauce
  • 2 tbsp avocado oil

Instructions
 

  • Soak dried chilies in warm water for 10 minutes, then drain.
  • Toast coriander and cumin in a skillet over low heat until fragrant.
  • Blend all ingredients in a food processor until smooth.
  • Adjust seasoning if needed and store in an airtight jar.
