- 10 dried red chilies
- 2 tbsp lemongrass
- 2 tsp ginger or galangal
- 4 garlic cloves
- 2 shallots
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp salt
- ½ tsp white pepper
- 1 tbsp fish sauce
- 2 tbsp avocado oil
Soak dried chilies in warm water for 10 minutes, then drain.
Toast coriander and cumin in a skillet over low heat until fragrant.
Blend all ingredients in a food processor until smooth.
