Ingredients
  

  • Keto Tortillas: 4 medium-sized
  • Cooked Protein: 2 cups ground beef, chicken, or turkey
  • Shredded Cheese: 1 ½ cups cheddar or your favorite keto cheese
  • Bell Peppers: ½ cup diced
  • Onions: ½ cup finely chopped
  • Sugar-Free Enchilada Sauce: 1 cup
  • Heavy Cream: ¼ cup
  • Spices: 1 teaspoon each of cumin paprika, chili powder, and garlic powder

Instructions
 

  • Heat a skillet and cook the protein until browned. Add bell peppers and onions, cooking until softened. Stir in spices and mix well.
  • In a saucepan, simmer enchilada sauce and heavy cream until thickened.
  • Lay tortillas flat, add filling, sprinkle with cheese, and roll tightly.
  • Arrange burritos in a greased dish, pour sauce over them, and top with cheese.
  • Bake at 375°F for 15-20 minutes until bubbly and golden. Serve hot.
