- Ground Beef: 1 lb
- Bell Peppers: 2 diced
- Onion: 1 small diced
- Garlic: 2 cloves minced
- Tomato Paste: 2 tbsp
- Diced Tomatoes: 1 can 14 oz
- Beef Broth: 4 cups
- Cauliflower Rice: 1 cup
- Olive Oil: 2 tbsp
- Seasonings: To taste
Dice the peppers and onion and mince the garlic.
Heat olive oil in a large stockpot and cook the ground beef until browned. Drain any excess fat.
Add diced onion, garlic, and bell peppers. Sauté until softened.
Stir in tomato paste, salt, pepper, paprika, and Italian seasoning. Cook for 2 minutes.
Pour in diced tomatoes and beef broth. Stir and bring to a boil.
Reduce heat and let the soup simmer for 20 minutes.
Add cauliflower rice and cook for 5-7 minutes.
Taste and adjust seasoning before serving.
