Ingredients
  

  • Zucchini 1 medium
  • Almond Flour 2 cups
  • Baking Powder 1 teaspoon
  • Salt 1/4 teaspoon
  • Cinnamon 1 teaspoon
  • Eggs 3 large
  • Sweetener 1/2 cup
  • Vanilla Extract 1 teaspoon
  • Butter 1/4 cup, melted

Instructions
 

  • Preheat oven to 350°F and line a muffin tin.
  • Grate zucchini and squeeze lightly to remove excess moisture.
  • Whisk almond flour, baking powder, salt, and cinnamon.
  • Beat eggs, sweetener, vanilla, and butter in a separate bowl.
  • Fold wet ingredients into dry ingredients.
  • Mix in zucchini.
  • Spoon batter into the muffin tin.
  • Bake for 20-25 minutes.
