Ingredients
  

  • Zucchini 2-3 medium
  • Cream cheese 1/2 cup
  • Grated Parmesan 1/4 cup
  • Shredded mozzarella 1/2 cup
  • Cooked bacon/ground beef 1/2 cup
  • Garlic powder 1 tsp
  • Italian seasoning 1 tsp

Instructions
 

  • Wash and dry zucchini, then slice into thin ribbons using a mandoline or vegetable peeler. Pat dry to remove excess moisture.
  • Mix cream cheese, Parmesan, mozzarella, garlic powder, Italian seasoning, salt, and pepper in a bowl until smooth and well combined.
  • Lay a zucchini ribbon flat, spread a small amount of filling on one end, and roll it up tightly. Place seam-side down in a greased baking dish.
  • Preheat oven to 375°F (190°C) and bake for 20-25 minutes until golden and bubbly.
