- 4 large eggs
- 1/4 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked breakfast sausage
- 1/4 cup sautéed spinach
- 2 low-carb tortillas
- Salt & pepper to taste
Cook sausage in a skillet until browned. Set aside.
In a bowl, whisk eggs, heavy cream, salt, and pepper.
In the same skillet, scramble eggs until fluffy and cooked through.
Warm tortillas slightly for easier folding.
Divide eggs, sausage, spinach, and cheese between the two tortillas.
Wrap into burritos, folding in the sides and rolling tightly.
Optional: Toast in skillet seam-side down until lightly crisped.
