Preheat your oven to 300°F (150°C). Line a flat baking sheet with parchment paper and set it aside.
Carefully separate the three large eggs, placing the egg yolks in one clean mixing bowl and the egg whites in another. Make sure no yolk gets into the egg whites.
Add the softened cream cheese to the egg yolks and whisk until the mixture becomes smooth and creamy. Make sure there are no large pieces of cream cheese remaining.
Add the salt and any optional dry seasonings you're using to the yolk mixture. Mix gently until everything is evenly incorporated.
Add the cream of tartar to the egg whites. Using an electric hand mixer, beat the whites until they become very fluffy and form firm peaks. When you lift the beaters, the peaks should remain standing rather than immediately collapsing.
Add approximately one-third of the whipped egg whites to the yolk and cream cheese mixture. Gently fold them together using a rubber spatula to loosen the yolk mixture.
Add the remaining whipped egg whites gradually, gently folding after each addition. Use a lifting motion with the spatula rather than stirring aggressively. The goal is to preserve as much air as possible.
Once the mixture is combined, spoon it onto the prepared parchment-lined baking sheet, dividing it into approximately eight evenly sized portions.
Gently shape each portion into a round using the back of a spoon. Keep the pieces relatively similar in size and thickness so they bake evenly.
Place the baking sheet into the preheated oven and bake for approximately 20–25 minutes, watching carefully toward the end of the cooking time. The cloud bread should look set and lightly golden around the edges.
Remove the baking sheet from the oven and allow the cloud bread to cool for several minutes. Avoid moving or stacking the pieces while they're still very hot because they will be delicate.
Once cooled, gently lift each piece from the parchment paper. Serve immediately or allow the pieces to cool completely before transferring them to an airtight container for storage.
For a firmer texture, toast the cooled cloud bread briefly in a toaster oven, conventional oven, or air fryer before serving.
