Ingredients
  

  • 1 lb ground beef
  • ½ small onion diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 1 cup salsa
  • 2 eggs
  • ¾ cup ricotta cheese
  • 1 ½ cups shredded cheese cheddar or Mexican blend
  • 6 small keto tortillas or 2 medium zucchini, thinly sliced lengthwise
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook onion, garlic, and ground beef in a skillet until browned. Drain grease.
  • Stir in taco seasoning and salsa, simmer for 5 minutes.
  • Mix eggs, ricotta, and half the cheese in a bowl.
  • Layer tortillas, taco meat, and cheese mixture in a baking dish. Repeat.
  • Top with shredded cheese and bake for 30 minutes.
  • Let rest before slicing. Enjoy!
