- 1 lb ground beef
- ½ small onion diced
- 2 cloves garlic minced
- 2 tbsp taco seasoning
- 1 cup salsa
- 2 eggs
- ¾ cup ricotta cheese
- 1 ½ cups shredded cheese cheddar or Mexican blend
- 6 small keto tortillas or 2 medium zucchini, thinly sliced lengthwise
- 1 tbsp olive oil
- Fresh cilantro for garnish
Preheat oven to 375°F (190°C).
Cook onion, garlic, and ground beef in a skillet until browned. Drain grease.
Stir in taco seasoning and salsa, simmer for 5 minutes.
Mix eggs, ricotta, and half the cheese in a bowl.
Layer tortillas, taco meat, and cheese mixture in a baking dish. Repeat.
Top with shredded cheese and bake for 30 minutes.
