Ingredients
  

  • 2 scoops protein powder
  • 2 large eggs
  • 1/4 cup unsweetened applesauce or mashed banana
  • 1/4 cup plain Greek yogurt
  • 2 tbsp almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon or vanilla extract
  • 1 –2 tsp erythritol optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line muffin tin.
  • In a bowl, whisk eggs, applesauce/banana, yogurt, and vanilla.
  • Add protein powder, almond flour, baking powder, and cinnamon. Mix until smooth.
  • Taste and sweeten if needed.
  • Spoon into 6 muffin cups.
  • Bake 18–22 minutes or until toothpick comes out clean.
  • Cool completely before serving.
