- 2 scoops protein powder
- 2 large eggs
- 1/4 cup unsweetened applesauce or mashed banana
- 1/4 cup plain Greek yogurt
- 2 tbsp almond flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon or vanilla extract
- 1 –2 tsp erythritol optional
Preheat oven to 350°F (175°C). Line muffin tin.
In a bowl, whisk eggs, applesauce/banana, yogurt, and vanilla.
Add protein powder, almond flour, baking powder, and cinnamon. Mix until smooth.
Taste and sweeten if needed.
Spoon into 6 muffin cups.
Bake 18–22 minutes or until toothpick comes out clean.
Cool completely before serving.
