- Chicken breast or thighs – 1 lb
- Olive oil – 2 tbsp
- Soy sauce or coconut aminos – 1 tbsp
- Sesame oil – 1 tbsp
- Garlic – 2 cloves minced
- Ginger – 1 tsp grated
- Bell peppers – 1/2 cup sliced
- Broccoli florets – 1/2 cup
- Green onions – 1/4 cup sliced
- Rice vinegar – 1 tbsp
- Xanthan gum optional – 1/2 tsp
Slice the chicken into thin strips.
Marinate with soy sauce, sesame oil, and salt for 10 minutes.
Heat oil in a wok over medium-high heat. Stir-fry the chicken for 3-4 minutes, then set aside.
Add garlic, ginger, and red pepper flakes to the pan. Stir-fry until fragrant.
Toss in bell peppers, broccoli, and green onions. Cook for 3-4 minutes.
Return chicken to the pan, add vinegar, and mix well.
Sprinkle xanthan gum if using, and stir until the sauce thickens.
