Ingredients
  

  • Chicken breast or thighs – 1 lb
  • Olive oil – 2 tbsp
  • Soy sauce or coconut aminos – 1 tbsp
  • Sesame oil – 1 tbsp
  • Garlic – 2 cloves minced
  • Ginger – 1 tsp grated
  • Bell peppers – 1/2 cup sliced
  • Broccoli florets – 1/2 cup
  • Green onions – 1/4 cup sliced
  • Rice vinegar – 1 tbsp
  • Xanthan gum optional – 1/2 tsp

Instructions
 

  • Slice the chicken into thin strips.
  • Marinate with soy sauce, sesame oil, and salt for 10 minutes.
  • Heat oil in a wok over medium-high heat. Stir-fry the chicken for 3-4 minutes, then set aside.
  • Add garlic, ginger, and red pepper flakes to the pan. Stir-fry until fragrant.
  • Toss in bell peppers, broccoli, and green onions. Cook for 3-4 minutes.
  • Return chicken to the pan, add vinegar, and mix well.
  • Sprinkle xanthan gum if using, and stir until the sauce thickens.
  • Serve hot and enjoy!
