Ingredients
  

  • 7 oz tofu
  • 1 cup red cabbage
  • 1/2 cup grated carrot
  • 1/4 cup sliced cucumber
  • 2 tbsp cilantro
  • 1 tbsp chopped peanuts

Dressing:

  • 2 tbsp peanut butter
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp ginger
  • 1/2 tsp garlic
  • Water to thin

Instructions
 

  • Press and cube tofu.
  • Cook tofu in a non-stick skillet until golden, 8–10 minutes.
  • In a bowl, whisk together dressing ingredients.
  • Shred cabbage, grate carrot, slice cucumber, chop herbs.
  • Combine all veggies and tofu in a large bowl.
  • Drizzle dressing and toss to coat.
  • Garnish with peanuts and enjoy!
