- 7 oz tofu
- 1 cup red cabbage
- 1/2 cup grated carrot
- 1/4 cup sliced cucumber
- 2 tbsp cilantro
- 1 tbsp chopped peanuts
Dressing:
- 2 tbsp peanut butter
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp ginger
- 1/2 tsp garlic
- Water to thin
Press and cube tofu.
Cook tofu in a non-stick skillet until golden, 8–10 minutes.
In a bowl, whisk together dressing ingredients.
Shred cabbage, grate carrot, slice cucumber, chop herbs.
Combine all veggies and tofu in a large bowl.
Drizzle dressing and toss to coat.
Garnish with peanuts and enjoy!
