- 1 cup low-fat cottage cheese
- ¼ cup reduced-fat mozzarella
- ½ cup spinach
- ¼ cup bell peppers
- Salt pepper, garlic powder
- Cooking spray
Preheat oven to 375°F (190°C). Spray baking dish with cooking spray.
Whisk eggs, cottage cheese, and seasonings in a bowl.
Add spinach, peppers, and half the cheese. Mix well.
