Ingredients
  

  • 3 ripe bananas mashed
  • 1 cup whole wheat flour
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1/4 cup skim milk
  • 1 tsp baking soda
  • 1/2 tsp baking powder optional
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Optional: 2 tbsp chocolate chips / 1/4 cup walnuts

Instructions
 

  • Preheat oven to 350°F (175°C). Prepare muffin tin.
  • Mash bananas until smooth.
  • Whisk in egg, applesauce, milk, and vanilla.
  • In separate bowl, mix dry ingredients.
  • Fold dry into wet ingredients; add optional mix-ins.
  • Fill muffin cups 3/4 full.
  • Bake 20–25 minutes until toothpick comes out clean.
  • Cool 10 minutes, then transfer to wire rack.
