- 1 cup flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup nonfat Greek yogurt
- 2 eggs
- ¼ cup unsweetened applesauce
- ½ cup sugar substitute
- 1 tsp vanilla
- Zest + juice of 1 lemon
- ½ cup blueberries
Preheat oven to 350°F and line loaf pan.
Whisk yogurt, eggs, applesauce, sweetener, vanilla, lemon juice & zest.
In another bowl, mix dry ingredients.
Combine wet & dry until smooth.
Fold in blueberries.
Pour into pan and bake 40–45 min.
Cool before slicing.
