  • 1 cup self-rising flour
  • 1 cup plain nonfat Greek yogurt

For the filling:

  • 1 lb 96% lean ground beef
  • ½ cup reduced-fat shredded cheddar cheese
  • ¼ cup finely diced yellow onion
  • 2 tablespoons finely chopped dill pickles
  • 1 tablespoon yellow mustard
  • 1 tablespoon reduced-sugar ketchup
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt or to taste

For the egg wash:

  • 1 large egg white
  • 1 teaspoon water

Instructions

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Brown the ground beef and onion in a nonstick skillet over medium heat for 7–9 minutes. Cook the beef to 160°F and drain excess liquid.
  • Stir in the garlic powder, onion powder, paprika, black pepper, and salt.
  • Allow the beef to cool, then mix in the mustard, ketchup, pickles, and reduced-fat cheddar.
  • Combine the self-rising flour and Greek yogurt in a bowl. Knead gently until a soft dough forms.
  • Divide the dough into eight equal portions.
  • Flatten each portion into a circle and add an equal amount of filling to the center.
  • Fold the edges over the filling and pinch firmly to seal. Place seam-side down on the baking sheet.
  • Whisk the egg white with water and brush lightly over each bomb.
  • Bake for 18–22 minutes, until golden and fully cooked.
  • Allow to rest for 5 minutes before serving.
