- 1 lb 99% lean ground turkey
- 1 onion diced
- 2 garlic cloves minced
- 1 packet taco seasoning or 2 tbsp homemade
- 1 can 15 oz diced tomatoes
- 1 can 15 oz black beans, drained & rinsed
- 1 can 15 oz corn, drained (or 1 cup frozen)
- 4 cups low-sodium chicken broth
- ½ cup reduced-fat cheddar shredded
- ½ cup plain nonfat Greek yogurt
- Optional: cilantro lime, baked tortilla chips
Sauté onion & garlic in a large pot until softened.
Add ground turkey; brown and break up. Stir in taco seasoning.
Add tomatoes, beans, corn, and broth. Bring to a boil.
Reduce heat; simmer 15–20 minutes.
Stir in shredded cheddar off heat until melted. Swirl in Greek yogurt.
Serve with cilantro and a lime wedge. Top with measured chips if desired.
