- 3 cups cooked shredded chicken about 12 oz
- 1/2 cup fat-free Greek yogurt
- 2 tbsp light mayonnaise
- 1/2 cup diced celery
- 1/2 cup halved red grapes or 1/2 cup diced apple
- 2 tbsp finely chopped red onion
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/4 tsp garlic powder salt & pepper to taste
- 2 tbsp chopped fresh parsley or dill optional
In a large bowl, combine 3 cups shredded chicken, 1/2 cup diced celery, 1/2 cup halved grapes, and 2 tbsp chopped red onion.
Whisk together 1/2 cup fat-free Greek yogurt, 2 tbsp light mayonnaise, 1 tbsp Dijon, 1 tbsp lemon juice, garlic powder, salt, and pepper.
Pour dressing over chicken mixture and fold gently until coated.
Chill at least 30 minutes. Serve over greens, in a wrap, or with crackers. Makes 6 servings.
