- 2 lb boneless skinless chicken breast, cut into chunks
- 1 tbsp olive oil or nonstick spray
- 1 large onion diced
- 3 carrots sliced
- 3 stalks celery chopped
- 8 oz mushrooms sliced
- 1 medium zucchini diced
- 4 cups low-sodium chicken broth
- 1 can diced tomatoes optional
- 2 cups chopped kale or spinach
- 2 bay leaves 1 tsp dried thyme, 1 tsp paprika
- Juice of 1 lemon 2 tbsp parsley, salt & pepper
Heat oil in Dutch oven; sauté onion until translucent.
Add garlic and spices; toast 30–60 seconds.
Add chicken and brown briefly.
Stir in carrots, celery, mushrooms, zucchini, tomatoes, and broth.
Simmer 20–25 minutes until vegetables tender and chicken cooked.
Stir in kale, lemon juice, and parsley. Serve hot.
