Ingredients
  

  • 1 tsp olive oil
  • ½ onion
  • 1 garlic clove
  • 1 carrot
  • 1 celery stalk
  • 5 cups fat-free chicken broth
  • ½ cup pastina
  • 1 cup shredded chicken
  • Salt pepper, parsley, lemon juice

Instructions
 

  • Heat oil in a pot; sauté onion, carrot, and celery 3–4 minutes.
  • Add garlic and cook 30 seconds.
  • Pour in broth; bring to a gentle boil.
  • Add pastina and simmer 6–8 minutes.
  • Stir in cooked chicken; heat 2–3 minutes.
  • Add parsley and lemon juice; season to taste.
