- 1 cup pumpkin puree
- 2 large eggs
- ½ cup fat-free Greek yogurt
- ¼ cup almond milk
- ½ cup sugar substitute
- 1 ½ cups self-rising flour
- Spices pumpkin pie spice, cinnamon
- 4 oz reduced-fat cream cheese
- 2 tbsp sugar substitute
- 1 tsp vanilla extract
Preheat oven to 350°F (175°C). Line muffin tin.
Mix cream cheese, sweetener, and vanilla until smooth. Set aside.
In a bowl, whisk pumpkin, eggs, yogurt, milk, sweetener, and vanilla.
Fold in flour, spices, baking soda, and salt.
Fill muffin cups halfway, add cream cheese dollop, top with batter.
Swirl with toothpick if desired.
Bake 18–22 minutes. Cool before serving.
