Ingredients
  

  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup fat-free Greek yogurt
  • ¼ cup almond milk
  • ½ cup sugar substitute
  • 1 ½ cups self-rising flour
  • Spices pumpkin pie spice, cinnamon
  • 4 oz reduced-fat cream cheese
  • 2 tbsp sugar substitute
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Line muffin tin.
  • Mix cream cheese, sweetener, and vanilla until smooth. Set aside.
  • In a bowl, whisk pumpkin, eggs, yogurt, milk, sweetener, and vanilla.
  • Fold in flour, spices, baking soda, and salt.
  • Fill muffin cups halfway, add cream cheese dollop, top with batter.
  • Swirl with toothpick if desired.
  • Bake 18–22 minutes. Cool before serving.
