Ingredients
  

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • ¾ cup nonfat Greek yogurt
  • 2 eggs
  • cup sweetener
  • ¼ cup unsweetened almond milk
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • ¼ tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Mix oats, baking powder, soda, salt, and spices in a bowl.
  • In another bowl, whisk pumpkin, yogurt, eggs, vanilla, sweetener, and almond milk.
  • Combine both mixtures; stir until blended.
  • Spoon into muffin cups (⅔ full).
  • Bake for 22–25 minutes or until golden and firm.
  • Cool 5 minutes before serving.
