For the seafood salad:
- 8 ounces 227 g cooked shrimp, peeled and deveined
- 8 ounces 227 g imitation crab meat
- ½ cup 55 g finely chopped celery
- ½ cup 65 g finely diced, seeded cucumber
- ¼ cup 35 g finely chopped red onion
For the dressing:
- ⅓ cup 80 g plain nonfat Greek yogurt
- 2 tablespoons 30 g light mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon finely chopped fresh dill
- ¼ teaspoon paprika
- ¼ teaspoon freshly ground black pepper
- ⅛ teaspoon fine salt or to taste
If using frozen cooked shrimp, thaw it in the refrigerator. Drain the shrimp and imitation crab thoroughly, pat dry, and cut the seafood into bite-sized pieces if needed.
Finely chop the celery, seeded cucumber, and red onion. Pat the cucumber dry with paper towels.
In a small bowl, whisk together the Greek yogurt, light mayonnaise, lemon juice, Dijon mustard, dill, paprika, black pepper, and salt.
Place the shrimp, imitation crab, celery, cucumber, and red onion in a large mixing bowl.
Add the dressing gradually and fold gently until the seafood and vegetables are evenly coated.
Cover and refrigerate for 20–30 minutes to allow the flavors to develop.
Stir gently before serving and divide into four equal portions. Serve over lettuce, in lettuce cups, or with a measured portion of crackers.
