  • 1 tsp olive oil
  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp Italian seasoning
  • 2 cups spinach
  • 9 oz cheese tortellini

Instructions
 

  • Heat oil and sauté onion, carrot, celery for 5 minutes. Add garlic.
  • Add broth, tomatoes, and seasonings. Simmer 10 minutes.
  • Stir in tortellini; cook 7–9 minutes.
  • Add spinach last 2 minutes.
