- 2 cans white beans rinsed & drained
- 1 tbsp olive oil or cooking spray
- 1 onion diced
- 2 carrots diced
- 2 celery stalks diced
- 4 garlic cloves minced
- 4 cups vegetable broth
- 1 tsp thyme
- 1 tsp rosemary
- ½ tsp pepper
- ½ tsp smoked paprika
- Juice of 1 lemon
- Fresh parsley chopped
Heat oil or spray in soup pot. Sauté onion, carrot, celery until softened. Add garlic.
Stir in beans and seasonings. Cook 2 minutes.
Add broth. Simmer 20 minutes.
Blend 2 cups of soup, return to pot.
Stir in lemon juice. Garnish with parsley and serve.
