Ingredients
  

  • 2 cans white beans rinsed & drained
  • 1 tbsp olive oil or cooking spray
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 garlic cloves minced
  • 4 cups vegetable broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • ½ tsp pepper
  • ½ tsp smoked paprika
  • Juice of 1 lemon
  • Fresh parsley chopped

Instructions
 

  • Heat oil or spray in soup pot. Sauté onion, carrot, celery until softened. Add garlic.
  • Stir in beans and seasonings. Cook 2 minutes.
  • Add broth. Simmer 20 minutes.
  • Blend 2 cups of soup, return to pot.
  • Stir in lemon juice. Garnish with parsley and serve.
