- 1 lb 450 g boneless skinless chicken breast, diced
- 1 medium onion finely chopped (about 1 cup)
- 3 garlic cloves minced
- 1 green bell pepper diced (about 1 cup)
- 1 can 15 oz / 425 g diced tomatoes, no-salt-added
- 1 can 15 oz / 425 g white beans, drained & rinsed
- 1 can 15 oz / 425 g corn kernels, drained (optional)
- 2 cups 480 ml low-sodium chicken broth
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt & black pepper to taste
- Cooking spray or 2 tbsp chicken broth for sautéing
- Fresh lime wedges & chopped cilantro for serving (optional, 0 points)
Spray pot with cooking spray or use broth to sauté onions, garlic, and peppers (4 minutes).
Add diced chicken and cook until lightly browned.
Stir in spices (chili powder, cumin, paprika).
Add tomatoes, beans, corn, and broth. Bring to boil.
Reduce heat, cover, and simmer for 20–25 minutes.
Taste, adjust seasoning, and serve hot with lime and cilantro.
