- 1 cup grated zucchini drained
- 1 cup rolled oats
- 1 large egg
- ½ cup fat-free plain Greek yogurt
- ¼ cup unsweetened applesauce
- 3 tbsp zero-calorie sweetener
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla extract
- Pinch of salt
Preheat oven to 350°F (175°C). Line a muffin tin with 10 liners.
Grate zucchini, squeeze out moisture.
Mix dry ingredients (oats, baking powder, baking soda, cinnamon, salt).
Mix wet ingredients (egg, yogurt, applesauce, sweetener, vanilla).
Combine wet + dry, fold in zucchini.
