Ingredients
  

  • 1 cup grated zucchini drained
  • 1 cup rolled oats
  • 1 large egg
  • ½ cup fat-free plain Greek yogurt
  • ¼ cup unsweetened applesauce
  • 3 tbsp zero-calorie sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line a muffin tin with 10 liners.
  • Grate zucchini, squeeze out moisture.
  • Mix dry ingredients (oats, baking powder, baking soda, cinnamon, salt).
  • Mix wet ingredients (egg, yogurt, applesauce, sweetener, vanilla).
  • Combine wet + dry, fold in zucchini.
  • Divide batter into 10 muffin cups.
  • Bake 18–20 minutes until a toothpick comes out clean.
