Mixing bowl
- 4 bone-in, skin-on chicken thighs
- 4 cloves garlic minced
- 1 lemon zested and juiced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp peprika
- salt and pepper to taste
- Chopped parsley (optional)
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine minced garlic, lemon juice, lemon zest, olive oil, oregano, paprika, salt, and pepper. Whisk everything together until well blended.
Place the chicken thighs in the bowl or a sealable bag and pour the marinade over them. Coat all pieces evenly. If you have time, marinate the chicken in the fridge for at least 30 minutes. If you're in a rush, you can skip this step and cook right away.
Line a baking sheet with parchment paper and place the chicken thighs on the sheet, skin-side up. Pour any leftover marinade over the chicken.
Bake the chicken in the preheated oven for 35-40 minutes, or until the skin is golden brown and crispy, and the chicken is fully cooked through.
Let the chicken rest for a few minutes before serving. Optionally, garnish with chopped parsley. Enjoy the crispy, flavorful thighs with your favorite sides!
