- 2 medium zucchinis
- 1 cup shredded mozzarella
- 2 tbsp grated Parmesan
- 1 tbsp olive oil
- ½ tsp garlic powder
- Salt and pepper to taste
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice zucchini into thin ribbons using a mandoline or peeler.
