- 1 large head cauliflower about 2 to 2½ pounds whole; use approximately 4 cups finely riced cauliflower before cooking
- 1 large egg
- 1 cup about 112 g shredded part-skim mozzarella
- 2 tablespoons about 10 g finely grated Parmesan
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ¼ teaspoon fine salt or to taste
- ⅛ teaspoon black pepper
Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Remove the leaves and tough core from the cauliflower. Cut into florets and pulse in a food processor until rice-sized. Measure approximately 4 cups.
Place the cauliflower in a microwave-safe bowl, cover loosely, and microwave for 5–7 minutes until tender. Alternatively, steam until tender.
Let the cauliflower cool enough to handle. Transfer it to a clean kitchen towel or cheesecloth and squeeze firmly until very little liquid remains.
Place the squeezed cauliflower in a mixing bowl. Add the egg, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and black pepper. Mix until evenly combined.
Transfer the mixture to the prepared baking sheet. Press into a 10–11-inch circle, approximately ¼ inch thick, keeping the thickness even.
Bake for 25–30 minutes, checking from around 22 minutes, until the surface is set and the edges are golden.
Let the crust rest for 5–10 minutes. Add measured sauce and toppings if desired, then return to the oven for 5–8 minutes until hot and melted.
Rest the finished pizza briefly before slicing into eight pieces.
