- 2 chicken breasts 6 oz each, diced
- 2 tbsp unsweetened peanut butter
- 3 tbsp unsweetened applesauce
- 1 tsp low-sodium soy sauce
- 1 clove garlic minced
- ¼ tsp ground ginger
- ½ tsp lemon juice
- 1 tsp olive oil
- Salt & pepper to taste
