Ingredients
  

  • 2 chicken breasts 6 oz each, diced
  • 2 tbsp unsweetened peanut butter
  • 3 tbsp unsweetened applesauce
  • 1 tsp low-sodium soy sauce
  • 1 clove garlic minced
  • ¼ tsp ground ginger
  • ½ tsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper to taste

Instructions
 

  • Cut chicken into bite-sized pieces, season with salt and pepper.
  • Mix peanut butter, applesauce, soy sauce, garlic, ginger, and lemon juice in a bowl.
  • Heat oil in nonstick skillet over medium heat.
  • Cook chicken 4–5 minutes until lightly browned.
