- 4 medium zucchini
- 1 lb lean ground chicken
- 1 small onion finely chopped
- 2 garlic cloves minced
- 1/2 cup diced tomatoes
- 1/4 cup grated Parmesan
- 1 tsp olive oil
- 1 tsp dried oregano
- Salt & pepper to taste
- Optional: spinach mushrooms
Preheat oven to 375°F.
Slice zucchini lengthwise, scoop seeds, brush with olive oil, season.
Sauté onion and garlic until soft. Add chicken, cook through.
