Ingredients
  

  • 4 boneless skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 3 garlic cloves minced
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper sliced
  • ½ cup pitted Kalamata olives halved
  • 1 tbsp capers optional
  • ½ cup low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of ½ lemon

Instructions
 

  • Season chicken with herbs, salt, and pepper.
  • Sauté onion and garlic in olive oil (optional).

  • Pour broth and lemon juice on top.
