Ingredients
  

  • 1 cup cherries pitted
  • 1 cup blueberries
  • 1/2 cup almond flour
  • 1/2 cup coconut milk
  • 3 large eggs
  • 1/3 cup granulated sweetener
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tbsp butter melted

Instructions
 

  • Preheat oven to 350°F and grease a baking dish with butter.
  • Wash and pit cherries; wash blueberries.
  • In a bowl, whisk eggs, coconut milk, melted butter, and vanilla.
  • Mix almond flour, sweetener, and salt in another bowl.
  • Combine dry ingredients with wet ingredients, whisking until smooth.
  • Spread cherries and blueberries in the baking dish.
  • Pour batter over fruit evenly.
  • Bake for 30-35 minutes until custard is set and golden.
  • Cool before serving. Enjoy warm or chilled.
