- 1 cup cherries pitted
- 1 cup blueberries
- 1/2 cup almond flour
- 1/2 cup coconut milk
- 3 large eggs
- 1/3 cup granulated sweetener
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp butter melted
Preheat oven to 350°F and grease a baking dish with butter.
Wash and pit cherries; wash blueberries.
In a bowl, whisk eggs, coconut milk, melted butter, and vanilla.
Mix almond flour, sweetener, and salt in another bowl.
Combine dry ingredients with wet ingredients, whisking until smooth.
Spread cherries and blueberries in the baking dish.
Pour batter over fruit evenly.
Bake for 30-35 minutes until custard is set and golden.
Cool before serving. Enjoy warm or chilled.
