Ingredients
  

  • 1 lb ground chicken
  • 1/2 cup Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup low-carb marinara sauce
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a muffin tin.
  • In a bowl, mix chicken, Parmesan, 1/4 cup mozzarella, egg, seasoning, garlic, salt, and pepper.
  • Divide mixture into 12 muffin cups and shape into cups.
  • Bake for 18–20 minutes until cooked through.
  • Add marinara and remaining cheese on top.
  • Broil 1–2 minutes until cheese is bubbly.
  • Let cool slightly before serving.
