Combine the Italian seasoning, paprika, salt, and black pepper in a small bowl. Pat the chicken breasts dry and season both sides.
Pour the chicken broth into the slow cooker and add the minced garlic. Arrange the seasoned chicken in the slow cooker and add the drained sun-dried tomatoes.
Cover and cook on LOW for approximately 3–4 hours or HIGH for 2–3 hours, checking the thickest part of the chicken with a food thermometer. The chicken must reach 165°F (74°C).
Carefully remove the cooked chicken to a clean plate. Leave the broth, garlic, and tomatoes in the slow cooker.
Add the heavy cream and softened cream cheese to the cooking liquid. Stir gently until the cream cheese begins to blend, then add the grated Parmesan.
Return the chicken to the slow cooker and coat it with the sauce. Cook on LOW for another 15–30 minutes, or until the sauce is smooth and heated through.
Stir in the baby spinach and allow it to wilt. Taste the sauce and adjust the seasoning if necessary. If it is too thick, add a little warm broth; if it is too thin, reduce the sauce separately.
Serve the chicken with the creamy sauce, tomatoes, and spinach. Pair with cauliflower rice, zucchini noodles, or another suitable low-carb side.
