- 1 cup dried pinto beans
- 1 small onion diced
- 2 garlic cloves minced
- 2 cups chicken broth
- 1 tsp smoked paprika
- 1 bay leaf
- 1 tbsp olive oil
- Salt and pepper to taste
Rinse the dried pinto beans thoroughly and soak them if desired.
Set the Instant Pot to sauté mode. Add olive oil, onion, and garlic, cooking until softened.
Add the beans, chicken broth, smoked paprika, bay leaf, salt, and pepper. Stir to combine.
Seal the lid and set to pressure cook (manual) on high for 30-35 minutes (unsoaked beans) or 20-25 minutes (soaked beans).
Let the pressure release naturally for 10-15 minutes, then carefully release any remaining pressure.
Remove the bay leaf, taste, and adjust seasoning. Serve warm with your favorite keto dishes.
