Ingredients
  

  • 1 cup dried pinto beans
  • 1 small onion diced
  • 2 garlic cloves minced
  • 2 cups chicken broth
  • 1 tsp smoked paprika
  • 1 bay leaf
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Rinse the dried pinto beans thoroughly and soak them if desired.
  • Set the Instant Pot to sauté mode. Add olive oil, onion, and garlic, cooking until softened.
  • Add the beans, chicken broth, smoked paprika, bay leaf, salt, and pepper. Stir to combine.
  • Seal the lid and set to pressure cook (manual) on high for 30-35 minutes (unsoaked beans) or 20-25 minutes (soaked beans).
  • Let the pressure release naturally for 10-15 minutes, then carefully release any remaining pressure.
  • Remove the bay leaf, taste, and adjust seasoning. Serve warm with your favorite keto dishes.
