Ingredients

  • 8 ounces 226 g full-fat cream cheese, softened
  • ½ cup 120 g full-fat sour cream
  • 1 cup 135 g pitted green olives, drained and roughly chopped
  • 2 tablespoons 28 g mayonnaise
  • 1 tablespoon 15 ml fresh lemon juice
  • 1 small garlic clove finely minced (about 3 g)
  • ¼ teaspoon ground black pepper
  • 1 tablespoon about 4 g finely chopped fresh parsley, optional
  • A small pinch of salt only if needed after tasting

Instructions

  • Let the cream cheese soften until it is easy to mix, then place it in a medium bowl and beat or mash until mostly smooth.
  • Add the sour cream and mayonnaise. Mix until the creamy base is evenly combined, scraping the sides of the bowl as needed.
  • Drain the pitted green olives thoroughly, pat dry if necessary, and chop into small pieces.
  • Stir the olives into the creamy base along with the lemon juice, minced garlic, black pepper, and optional parsley.
  • Taste the mixture before adding salt because the olives may already provide enough. Adjust the lemon or pepper in small amounts if needed.
  • Cover and refrigerate for 20 minutes to let the flavors combine and the texture firm up slightly.
  • Stir gently, garnish with reserved chopped olives or parsley if desired, and serve chilled with low-carb vegetables or suitable crackers.
