Ingredients
  

  • Frozen peas 4 cups
  • Heavy cream 1/2 cup
  • Chicken or vegetable broth 4 cups
  • Onion 1 medium, chopped
  • Garlic 2 cloves, minced
  • Olive oil 1 tablespoon
  • Thyme 1 teaspoon
  • Salt and pepper to taste

Instructions
 

  • Chop the onion and garlic, and prepare the peas and broth.
  • In a large pot, heat olive oil over medium heat and sauté the onion for 5 minutes.
  • Add garlic and sauté for an additional 30 seconds.
  • Pour in the broth and bring to a simmer, then add peas and thyme. Cook for 10 minutes.
  • Blend the soup with an immersion blender until smooth.
  • Stir in the heavy cream and season with salt and pepper to taste.
  • Simmer for 5 minutes and adjust seasoning if needed.
  • Serve hot and enjoy!
